Yeast is found in all places, but in places where the amount of sugar is high, it is found in large quantities, such as in sugarcane juice, fruits and milk, etc. It is a saprophytic fungus.

Structure
  1. It is a spherical unicellular, colourless, thallus plant with a diameter of 2 to 8 μ and a length of 3 to 15 μ.
  2. Yeast does not have a fungal net.
  3. Yeast is surrounded by cell wall. Cell wall contains 6 to 8% protein, 8.5 to 15.5% lipid and chitin. In addition, the cell wall consists mostly of two polysaccharides named glucon (30-35%) and mannan (30%).
  4. Cellulose is not found in it.
  5. The cytoplasm, located inside the cell wall, is divided into two parts. The outer part is in the form of a thin layer called ectoplast and the inner part is dense granular called endoplasm.
  6. Foods stored in the cytoplasm of yeast are found in the form of glycogen and volutin granules and fat.
  7. Mitochondria and ribosomes are found in the protoplasm. RNA is found in ribosomes.
  8. The star-shaped centrosome is found at the front end of the nucleus.
